#1 Dry Ingredients Mix:

  • In a large mixing bowl combine dry ingredients and then fold in dried cranberries.

Crunchy Homemade Almond Butter Granola


Ingredients

Dry ingredients...
  • 3 cups Rolled Old Fashion Oats
  • 1 tsp ground cinnamon
  • 1 cup sliced almonds
  • 1/4 cup coconut palm sugar
  • 1/2 tsp salt
  • 1/4 cup super seed mixture
  • 1/8 cup flax seed (optional)
  • 1 1/2 cup dried fruit
Wet ingredients...
  • 1/2 cup almond butter
  • 3/4 cup agave sweetener
  • 1 tsp pure vanilla extract

Directions

  1. Oven: Preheat oven to 325° with top rack place mid-top level in oven. Prep the baking sheet with parchment paper and cooking spray.
  2. Dry ingredients: In a large mixing bowl place all the dry ingredients and toss to mix and coat evenly and set aside.
  3. Wet ingredients: In a small pan over low-medium heat melt almond butter, agave, and vanilla until incorporated into a glaze. Careful not to burn, remove from heat if the mixture gets too hot. This mixture only needs to get warm enough to melt and blend into a glaze. I use a small whisk.
  4. Combine: In the large mixing bowl, add the almond butter mixture to the oat mixture and stir to combine thoroughly. This mixture is slightly sticky but I find using a gloved hand works best to get all the oats well coated. Pour the mixture out onto the sheet pan and pat it into one flat even, thin layer. Cook for 20 minutes (oven cook time varies so keep an eye on this). Remove from oven and allow to cool completely to develop crunch.
