Basic Apple Pie

October 26, 2008

Apples are everywhere and I have so many that I am not sure what to do with them. I already made an apple cake, but what else (maybe this week scones!)? My sister is a HUGE apple pie fan, so I decided to be a great sibling this week and make one for her.

The thing about apple pie in my opinion is that it should be kept simple. I have looked up various recipes and people do crazy things and add random things. That’s all wonderful, but really I prefer to keep it pretty easy and American.

Just a regular pie crust, cut up apples with half brown sugar, half regular sugar and plenty of cinnamon. That’s it. Nothing more. Maybe some lemon juice to keep the apples from turning. Same recipe as 50 years ago. Tradition, and I’m sticking to it!

Plus, my sister has yet to complain that she doesn’t like it. I also used the leftover items to make a galette.

Two years ago at Thanksgiving, sensing that a docirve was on the very near horizon, I drank most of the Yellow Tail I could get my hands on an repaid my wife’s family for years of verbal abuse and non-sensery. I labled my brother-in-law and family as a bunch of hippies, the sister-in-law with a God complex, and believe at some point told my father in law, just because he doesn’t believe in Hell, doesn’t mean they aren’t making a spot for him. Best. Thanksgiving. Ever.
