Swiss Broccoli & Cheese Soup

Since the weather is getting cooler out, I was discussing with my good friend Faith about how I am excited for all the soups and stews to be in season. Well not “in season”, just more of a desired dish. Anyway, I was telling her how much I love broccoli and cheese soup since I am such a fan of swiss cheese

She grew a bit confused and informed me that typically broccoli and cheese soup is made with cheddar. I’m not a huge cheddar fan due to its intensity, so I decided to make her a batch to show her how much better swiss it.

It’s only a couple of simple ingredients. Sauteed onions in some butter. After they get soft (not crispy), then you add some chicken gravy. I know, I know, I know! This sounds absurdly disgusting, but I swear my mother had a cookbook with this recipe and it has never failed us yet.

You let it just warm up and then fill the gravy container(s) with milk (so that its equal parts). Put it the soup and let it simmer. Then you shred in as much swiss cheese as your heart desires. In my case, it would be A LOT!

This is by far my favorite soup. With some fresh bread on the side, you got yourself one happy lady!
