Steve’s Avocado Pound Cake

Steve is a bundle of positivity and creativity (he designed this blog! Go to his website). He’s also Granola Jeny’s counterpart! I remember going to their apartment for margarita nights, so going the guacamole route is about right.

Plus, I love veggies so this recipe in Joy the Baker for Avocado Pound Cake caught my eye. The reviews gush over the faint hint of avocado. I used one more avocado than the recipe called for and I honestly couldn’t taste it. Perhaps I have a bad palate?

I also forgot that it is a ‘pound cake’ and not short bread, so it’s sweeter. I think on my next shot, I’ll go crazy and use 4 avocados (yes! Go nuts!) and cut back on the sugar by a cup.

But then again, I prefer my bananas green because they aren’t as sweet, so use your own judgment on whether you want to take my recipe change advice. 
I do like the color of the cake; admittedly it was looking a little murky green once it was mixed, so I added some fluorescent yellow food coloring to pep it up. I normally wouldn’t bother, but when mailing gifts, presentation is a tad important. Congrats Steve!
